Three sibling models — epicure-core, epicure-chem, epicure-cooc — run locally in Fond's model sidecar and drive the ingredient-pairing analysis behind each dish's flavor discussion. Each is pinned to a specific revision in MODELS.lock, alongside its license. Startup does not yet verify those revisions against a checksum — the lock file records what should be running, and checking it is still to do.

Ingredient lines ("2 cups flour, sifted") are split into quantity, unit, and name by the open-source ingredient-parser CRF model, run locally in the same sidecar. It does the same job for every fetched recipe, so versions can be compared on equal footing before any language model sees them.

Google's EmbeddingGemma (embeddinggemma-300m) is intended to group near-duplicate recipe versions for the diff step above. It is gated under Google's Gemma license and is not currently installed, so it has not yet run: near-duplicate detection is done entirely by comparing parsed ingredient sets. It is listed here because the design allows for it, not because it is in use.
